Ginger Blueberry Scones

Ingredients

  1. 2 cups all-purpose flour
  2. ¼ cup granulated sugar
  3. 2 teaspoons baking powder
  4. 1/8 teaspoon salt
  5. 6 tablespoons butter, cold, cut into
  6. pieces
  7. ½ cup fresh blueberries
  8. 2 teaspoons fresh ginger, finely grated
  9. ½ cup heavy cream
  10. 2 large eggs
  11. 2 teaspoons vanilla extract
  12. 1 teaspoon water

Method

  • Step

    SIFT the flour, sugar, baking powder, and salt together in a large bowl.

  • Step

    CUT the butter into the flour using a pastry blender or by hand until the mixture resembles coarse crumbs.

  • Step

    MIX the blueberries and ginger into the flour mixture, then set aside.

  • Step

    WHISK together the heavy cream, 1 egg, and the vanilla extract in a separate bowl.

  • Step

    FOLD the cream mixture into the flour until they combine.

  • Step

    FORM the dough into a round shape with a 1½-inch thickness and cut it into eighths.

  • Step

    BRUSH the scones with an egg wash made from 1 egg and water, then set aside.

  • Step

    SELECT Preheat on the air fryer, adjust to 350°F, and then press Start/Pause.

  • Step

    LINE the preheated air fryer basket with parchment paper and place the scones on top.

  • Step

    COOK for 12 minutes at 350°F, until it turns golden brown.
