COMBINE the lemon juice and coconut milk in a small bowl, then set aside. MIX the flour, baking powder, baking soda, and salt together in a separate bowl and set aside.
BLEND together sugar, coconut oil, lemon zest, and vanilla extract in an additional bowl. Then, combine with coconut-lemon mixture and stir to combine.
MIX your dry mixture gradually into the wet mixture until smooth. Then, gently fold in blueberries.
SELECT Preheat on the air fryer, adjust to 300°F, then press Start/Pause.
GREASE muffin cups with the cooking spray and pour batter in until cups are ¾ full.
PLACE the muffin cups carefully into the preheated air fryer. Select Desserts, adjust time to 15 minutes, then press Start/Pause.
REMOVE muffins when done cooking and let them cool down for 10 minutes. Then serve.
