This machine requires 6% sugar content in your mix to operate. To explain it in simpler terms, both sugar and water weigh one pound per pint, so if you want to make a 32-oz batch, 6% comes out to a minimum of 1/4 cup of sugar. Comparing this to a batch of Kool-Aid, you add one cup of sugar to 64 ounces of water (12%.) Therefore, a pitcher of Kool-Aid will freeze up quite nicely. To go another level farther down this rabbit hole, you'll need a minimum of 60 grams of sugar per 32 ounces of juices, prepared bar mixes, and the like to get it to freeze properly, 100 grams would be a good standard to guarantee a good freeze. You can augment a prepared mix with a good simple syrup (dissolved sugar in warm water until it will not dissolve any longer, chill and use.) to reach that 10-12% level. So, 6% will work, 10-12% works better.

Now you can order this freezer without pulling out a slide rule to figure out your sugar content. Alcohol can be added to the mix as well, 3% is a good rule of thumb here, one ounce per 32 ounces. Instead of mixing the alcohol into the freezer, I suggest making the mix without the booze, then pouring a float of your favorite bottle on top, mixing if desired. It just works better in the machine, and allows guests to select from more than one bottle that you poured into the machine.

Read the manual carefully to best use the various settings and freeze levels provided. Another best practice is to chill your ingredients below 40 degrees before adding to the machine. This will save you a lot of time; In the Kool-Aid case above, include ice in your 64 ounces of liquid, allowing it to cool as it melts, then place in the refrigerator until party time. It cuts freezing time in half or more. Just do it.

Last, this slush machine requires complete cleaning after each day's use (each day, not each batch unless changing flavors dramatically...) I take the additional step of sanitizing the parts after washing and before reassembling. One capful of bleach in a gallon of water does the job. Allow parts to sit fully covered for 5 minutes before rinsing and reassembly. Make sure parts are fully assembled, they fit tightly in the freezer. Great machine, recommended.
